Board your coach for the 20 minute drive through picturesque Mombasa town and across the new Nyali Bridge to the north coast to your open air kitchen. Situated on the beach overlooking the Indian Ocean, this is the perfect setting for you to learn all about the mysteries of the spices that were responsible for opening up the trade routes.

Meet your ‘Mpishi’ (Swahili for cook) who, as an introduction to one of the most important ingredients of Swahili cuisine, will serve you with a refreshing drink of ‘Madafu’ (fresh coconut milk). Now it is time to experience the different flavours and textures of the traditional spices and herbs that go into the making of Swahili Ginger Crab. Your Mpishi will explain all about when to add the cloves, cardamom, turmeric and in what precise order, and show you exactly how to prepare the essential garlic and ginger. Then the green chillies, not red, and finally the coconut milk to soften the bite of the chillies. The final touch of coriander and fenugreek, and the dish can rest as his assistant demonstrates how to make traditional chapattis to accompany the crab.

After enjoying your lunch you will be presented with an autographed recipe to remember your day and a spice tray so that you can cook ‘Swahili Ginger Crab’ again for your friends when you get home.
